It just needs a long simmer to tenderize. LL did it right. Rabbit has a wonderfully mild flavor.

Best to use domestic raised meat rabbits and not game rabbits someone went out and shot in the swamp. Those are much leaner and tougher, plus a bit more "gamey" in flavor.

When I ate some today, it was quite salty and I had to add some more liquid, so oops. Sorry about that. I had been drinking.
