Quick Red Beans and Rice recipe for 40

I group I'm in is cooking Red Beans and Rice for our local Ronald McDonald house.

We have to cook everything on site within a 2 hour window so we can't soak the beans overnight.

I'm going to use Blue Runner Red Beans.

Does anyone have a recipe for 40 servings?

Large plates? Bowls? Small bowls?

Pick a serving size of the red beans without the rice. 8 oz, 10oz, 12oz?

Got your serving figured out? Great! How many ounces in the blue runner can? Now divide that number by the serving oz number and that’s how many servings you will get per can.

I'm not used to feeding 40, especially 40 people I have never met.

We can't bring in anything that's not prepared on site.

He’s going to need at minimum 20 minutes to cook the vegetables. Then that leaves him at the most, 1 hour and 40 minutes to cook 4 gallons red beans. Not gonna work.

So true. You can soak them for hours, but you won’t get good red beans with 2 hours of cooking time

Never mind. Thought you were using canned blue runner.


Mix 1 can spicy to each can of original. Add some cooked sausage. Then adjust seasonings as needed. Quick, easy and really good. You can also add onions bell peppers and celery.

If you’re talking plates or full bowls, I’d go with 12-16 ounces of red beans per serving. Depending on how much you want to serve.

If this is the case, you need 480 ounces minimum and possibly up to 640 ounces. Plus add a little extra to be sure. I’d just get 50 (16 ounce) cans and that gives you 50 (16 ounce) servings, which is large. Add to that 3-5 pounds of sausage.

** If you’re talking small bowls, figure 8-10 ounces of red beans per serving.

Rice - I’d figure at most 8 ounces cooked rice per person, that’s 1 cup. 1 pound of raw rice gives you roughly 7 (8 ounce servings). I would cook 10 pounds to be sure. It will be a couple of pounds too much, but at least you know.

I'm curious now. Is this a competition or feeding guests/volunteers? Fundraiser? Two hours to set up, cook and be ready to serve?

This is something for the parents of hospitalized kids.

Ronald McDonald houses provide free lodging for the parents. Volunteer groups come in an provide meals for them which is what my organization is doing.

We don't get access to their kitchen until 3 p.m. and have to have the meal ready to serve by 5 p.m. That's why I have to use the canned red beans. There just isn't enough time to do it any other way.

The organizations get to pick what they want to serve and we thought this would be a nice change of pace for them.

In most cases, the parents have been in the hospital with their kids all day so having a home cooked meal is really special for them.

If there's a RMH in your area you should get a group together and do this.

It's tremendously rewarding for your group and so appreciated by the parents.

Again. This IS NOT A COOKING COMPETITION.

We're cooking a meal for parents of hospitalized kids.

We have access to the kitchen beginning at 3.

We have to serve the food at 5.

For someone with a sick child who has spent the day eating out of vending machines this version of Red Beans and Rice will be the best thing they've eaten all day.

We won't get any complaints about it not be "real".

Might be easier to cook them a gumbo
I’ve stayed at a similar type house and we did gumbo for the house

This sounds more like the rules of a cooking competition as opposed to a strictly charitable event.
