Where does one obtain "game"? Is it legal somehow? Or we assume they hunt it themselves or something?

Farm raised rabbit and venison, as well as other things like elk, are widely available.

Very interesting

Lola’s has amazing Paella but it’s like a 10 top restaurant and in mid city.
I could See another paella restaraunt doing well at that location

No....specific species are referred to, in US common usage, as game whether or not they’re farm raised. Typically, anything that’s not beef, chicken, pork, or veal.....like rabbit, duck, pigeon, venison, other game birds like pheasant, elk, buffalo, etc.

ETA game is not necessarily wild game.

Not related to Paella, but still a question.

Are Sacalait considered a sport fish in LA? In Mississippi they are considered a sport fish and may not be sold, also bream. They may not change hands, or some legal wording like that. Asking because that NO restaurant carried that name - I think it is closed now.

You can sell catfish, buffalo, gar, Grendel, carp.
