Question About Secret Ingredient in the "Real Pie Man's" Food

There used to be a guy called the "Real Pie Man" who hustled around downtown and mid-city NOLA selling his seafood pies and other food. I had his food several times and it was VERY good, but I haven't been in that area working in almost 20 years. I have no idea if he's still active.
One of the dishes I really liked was his crawfish pasta. It had a spice ingredient that gave it a unique earthy, maybe herbal flavor that I want to reproduce.
I first thought it might be ground bay leaf or file powder, but they didn't come out like I wanted. I even went so far as to brew "bay leaf tea" to isolate the bay flavor.
Does anybody on here have any idea what this mystery ingredient might be?

Oddly I just watched a YouTube video of Real Pie Man. He has a place in Gretna now.

They’ve got a small restaurant in Gretna. It’s pretty good. Haven’t stopped by in several years.

That menu looks pretty good and from the video I can tell he's doing his fried fish right.
