Quail Recipes
I cooked quail last night. Delicious little bird.

Bought some from Maxwells. I browned them on my black iron skillet, then added onions, bellpepper and garlic. Cooked that down a little then added this white wine reduction sauce

Cooked for about an hour. Made some black eyed peas with fresh bacon from fresh market for the side.

These little guys would be great on the grill, bacon wrapped, or stuffed with sausage. I also have a frozen duck in my freezer and 4 more of these little bastards, that i may make a gumbo with, some day soon.
