I’ve been putting hot foods in a cold refrigerator for most of my life. I’ve also left shite on the stove/counter overnight and refrigerated it the next
Morning. So far so good.
I’ve eaten foods cooked the night before that were left on the stove overnight at the camp. They were cooled to whatever the ambient temp in the camp was. Again no problems.
I respect your wanting to be safe, but I wouldn’t sweat it too much.

You have been one fortunate soul my friend. I once worked with a guy that swore his wife fixed the absolute best turkey neck stew, and it is one of my comfort dishes, much like gumbo.
Long story short, he was going to bring a pot of it to work to feed the guys and his wife fixed it and left it on the stove overnight in the pot. He brought it to work and as soon as I opened the lid I knew it was off, and not a little off, but way off. It had actually started to ferment and smelled like somebody took a dump in the pot. NOBODY ate it and the guy was pissed to the point he decided to eat a couple bowls to prove a point.
For his effort he spent the rest of his shift in the toilet puking in the sink while shitting in the commode, sometimes at the same time.
If food poisoning ever grabs you, you'll not want to go that route ever again.

So much this right here!
This plus years and years of food safety training has made a believer out of me. If something gets forgotten on the stove or in the oven over night, out to the trash it goes. Are we being too anal? Possibly but a few bucks of food is not worth the risk to me and mine.
Mingo, you really should try the earlier mentioned experiment and report back. Refrigerators are efficient but you are adding a large heat load to a unit that is actually pretty small, BTU wise, if you stick a hot pot in there.

Oh lord. I guess we have a whole load of chefs in this thread who continuously make industrial loads of hot foods that would cause a massive dislocation in respect of a fridge's temperature when transferring immediately from high burner to fridge. This thread. LOL.
I also love the FDA cite as being authoritative. I hope those of you citing them also never eat steak tartare or raw milk cheeses in Europe that aren't, god forbid, pasteurized. Clutch your pearls, ladies.

Steak tartare, properly prepared, is served freshly made. So it is pretty low risk.
Unpasteurized cheeses are also salted and fermented, so again, relatively low risk.
I eat freshly prepared street food, even in developing countries....but I choose grilled or deep fried stuff, not liquidy cooked foods that have been sitting around at room temp for prolonged periods.
Cooked food held at unsafe temps for hours is not low risk.
Agree w upthread....if you’ve ever suffered a serious bout of food poisoning, you’ll sing a different tune subsequently.

No, I'm a male, but I acknowledge your juvenile attempt at humor.
The poster was insinuating that I was advocating for processes that would lead to, or that would otherwise contribute to, food poisoning. I happen to think that's ludicrous and was asking what would lead him to believe that.
Please do carry on, however. I'm sure that there's a hilarious poopy joke somewhere in your repertoire.

If you have a big mass of liquid to cool, put a fan on it and stir every 5 minutes or so and when it gets close to room temperature, put it into the refrigerator. The fan (air movement around the outside of the pot) really helps.
Having no lid on the pot either helps the rising heat to make to pot cool more quickly, or allows bacteria to fall into the pot. Choose your own personal belief on that. I do know the fan helps a lot. Most of the time, we do not have the space to do ice bath cooling, since we only do large batches, when the kitchen is very busy doing other stuff.
