Pulled Pork Nachos

Did a 7 lb butt today and looking to make Pulled pork nachos. Can someone please suggest what toppings to use. I had some at a bbq festival in New Orleans a few years back, but cannot remember what was on them.

Sharp cheddar cheese
Sour cream
Raw purple onions diced
Onion tops
Jalapeños

Did a little research. Crescent City Blues and BBQ Festival. Cochon nachos sold by Walker's BBQ. Is anyone familiar with these? Trying to replicate. I dont see them on the everyday menu, so I'm assuming its something they do for the festival only.

it is impossible to frick up a nacho
to the list above I would add a sprinkle of shredded cabbage when they come out the oven
FDB tip:
fry whole corn tortillas till crisp then build with toppings tostada style
when they come out of the oven cut into 4 pieces with a pizza cutter

I do these from time to time and they are always a hit. Throw all the toppings on there and stick in the oven to melt the cheese.

this is a great idea...did 2 butts (on sale) last wknd. One got devoured, the other I split in half and froze...thinking that's what I wanna use half for.
