Can someone sell me on this? Whats the difference from a Cockpot and the uses?

It is a pressure cooker also and it is fabulous. It cooks things in a fraction of the time you would normally cook things and most of it is preset stuff which is good for a lot of people. It really does work well for large families in need of a quick meal. 8 quart one is perfect but this one is good too. We have both.

Potatoes in 10 minutes, red beans and rice in 30 minutes, etc....its worth it alone for stews and beans.

10 minutes cook with 25-30 before/after

I haven't gotten a good feel for it yet. admittedly i don't use mine often, but I'm not as big a fan as others.

I use my sous vide way more often, so if I was going spend 70+ on a food item it would be that, but to each their own of course in the kitchen

This. I have a pot of black beans and chorizo cooking in mine right now.

Any of you cajun baws use an instapot and make red beans? If so, how did it compare to cooking traditional?

It's a pressure cooker but also has a sautee setting (among many others), which sets it apart from other pressure cookers. So for example if you want to make chili you can sautee everything right there in the pot, close the lid and then pressure cook it all in one spot.

I have. Cooked on high pressure for a little over an hour without any soaking beforehand and they come out pretty great.
