A few years ago there were some very good prime rib recipes and the search function isn't showing the thread.
What is the best way to cook this thing? Thanks.

in google search type in "tigerdroppings prime rib" and it should show threads.
Anyway, I season up thick with course salt and cracked pepper.
I charcoal grill it over direct heat to sear all sides, then move over to indirect heat.
Smoke at about 225F until internal temp is 130F.
I think it's about 35 min/lb.
Remove from grill and let rest for about 20 min then slice and serve.

I salt/white pepper/garlic power liberally the day before. Then smoke over a pan of red wine, chopped onions and garlic at 225 until 120 internal. Wrap and let rest for 30 minutes min. It will get to about 130 internal. Broil on high for a couple minutes per side to form a crust.
Add some beef stock to the pan drippings and reduce while the meat is resting.

I did this smoke last year for New years day.
Came out great. I would take off at 120 or 125 next time though....

Thanks for the help. I'm emptying out a freezer to make room for all of this venison. I smoked a brisket yesterday and am grinding a pork shoulder into sausage today.
I figured I'd cook the one I have for practice weekend because I'm tasked with cooking a 15 pounder for Christmas.

Any venison that doesn't fit, I'll "store" it for you
