I like 21-25 for boiling and a lil smaller for frying. I don't see a problem with 35-41 but maybe meet in the middle.

Smaller is fine. I agree with others that like the ones that fall out.

Can’t stand big arse shrimp. 41-50ct is perfect. And that goes for most applications tbh

Definitely medium to small for me. I have seen places actually state the number of shrimp on the po boy. frick all of that.

Your business partner is right. a 36-40 to 40-50 is optimal, I personally don't like big arse shrimp on a po'boy.
