Mine’s probably 3:1 mayo to mustard, more eggs and dil pickles, less potatoes. I love egg salad, and don’t really care about the potatoes, I don’t measure anything, just go by the color and taste.

More mayo than mustard but enough mustard so it's more yellow than white. I find too many people adding way too many ingredients to potato salad. It should be simple especially if meant to complement gumbo. Eggs, potatoes, mayo, mustard, relish (NOT SWEET), and paprika is optional as a garnish to add color.

Mayo for me, but not too much, with a little squirt of yellow mustard for color. Be sure to use plenty of salt and pepper as the potatoes soak it up and small diced celery for crunch. Hardboiled eggs and green onions. I usually throw in Italian seasoning as well and some red wine vinegar for tang. That's the basic potato salad. Other times, I like to use seafood-boiled potatoes, as another person commented. Try using Cousins Creole Tomato dressing in place of or along with the mayo. This version would have no mustard. If you are going to use bacon bits in any version, only use bacon you've cooked and crumbled yourself.

more 50/50 mayo to mustard. 1 egg for every potato, mash 2-3 yokes with mayo mustard sauce, use both dill and sweet pickle diced plus a few drops of juice. I don't use relish.

A little onion and celery chopped very fine.

I’ve had amazing potato salads of all kinds, so please keep doing them all. But personally I prefer the mayo-based ones especially when they boil the potatoes with crab boil

Mom does one that uses vinegar mayo chopped green bell peppers, green onions...fricking fantastic for everything but gumbo

Most of my yellow comes from egg yoks .But I do ad some mustard. Dill not sweet relish. Enough Mayo to hold it together.

Mustard all day. I’ve had some mayo based ones that might as well just be mashed potatoes. Give me the tang and some damn flavor

I love me some McAlister’s potato salad. Anytime we have a need for some for a family function...I go pick up a quart or two depending on how many people we’re feeding. For a side item that most folks are only going to get a little scoop of....I’d rather keep it simple and easy.

Never mustard. Mayo, Salt, black pepper, and white vinegar. Eggs of course. Just enough mayo to hold it all together. Never wet enough where it's watery.

Sweet = hell no
Tart/tangy = yes best with fish or chicken
Savory (bacon, dill(not pickles) mayo, eggs, red tators skin on, pepper) = my favorite all around goes best pork chops
