Potato Salad for gumbo

Need a good recipe for potato salad for gumbo

Eggs? Onion? Pickles?

I used to put potato salad in my gumbo. however, after discovering how good it is to have a peeled sweet potato in it, I will never ever use potato salad again. try a baked/peeled sweet potato in your bowl. you won't regret it. it doesn't "melt" in the juice like potato salad does and it is unbelievable.

I need to try the sweet potato thing. And please no pickles or relish in the potato salad. Eggs, potatoes, mayo, onions, a very small amount of mustard, salt, and pepper.

I was introduced to this in 1996. I had never seen anyone ever do this. however, my stepmom had cut the sweet potatoes in half after they were baked and we tried a half in our bowl of gumbo. holy shite.........

I have never made gumbo without baking sweet potatoes since that day.

Sounds interesting…but seeing as I don't care for sweet potatoes I doubt I'll be dropping one in a gumbo anytime soon.

As far as a potato salad recipe, it's probably one of the easiest side dishes to make. The simple one is eggs, mayo and creole mustard. But if I'm looking to jazz it up a bit I add red onions and a little dill relish.

If it's a seafood gumbo I'll sauté onions, bell pepper and celery in butter then add crab meat and small shrimp. Fry off a couple of pieces of bacon and crumble it in. Then of course, add that to your cooked and chopped potatoes and eggs. Mayo and creole mustard, salt and black pepper wrap it up.

Boiled potatoes from a crawfish, crab or shrimp boil make for a good potato salad as well.

Deep South Dish has one specifically meant for gumbo.

I have 2 gallon bags of crawfish boil potatoes in my freezer waiting for the first gumbo of football season.

My wife thinks I'm half-crazy because I wipe the inside edges of the bowl, smooth the potato salad then sprinkle parsley and a little creole seasoning on top. Doesn't matter what the occasion is.

The link that Rat put up looks legit. I'd chomp on that for sure.
