Try it and report back.

You only need to even boil and broil really but grilled adds even more depth of flavor.

They are covered in sauce anyway, you can really taste the frying oil and the texture is identical.

Boil, let dry in the fridge for a little while then either broil or grill.

They are just as crispy as fried.

If you don't believe me, try it. Its restaurant wing quality. Make your own blue cheese dressing from scratch and you'll have wings 100 times better than you can buy.

I've done the Serious Eats double fry a number of times. They turn out great. I use whole wings.

Fwiw, I make wings just as good, if not better than any restaurant in BR. Its not some fancy meal that requires any skill. Chicken, fryer, sauce. The only reason I eat wings out of the house is because frying in the kitchen can be a mess, I like to drink beer with them, or look at some boobs while I eat.

You can make just as good of wings boiling, drying and baking as you can frying. I'm telling you, I've done it.

And you don't make a total mess.

It would cost you $5 to try it out and make up your own mind.

Steamed, then baked isn't bad. But it isn't even close to a fried wing. I'm not sure what y'all mean by it being as good, or better.

ive done this minus the boil. i replaced the boil with brine sometimes also.

is boiling doing that much?

It renders the fat apparently, plus you can crisp more effectively.

You gotta let the skin dry in the fridge though. It's a bit more labour intensive than frying but you don't have everything that comes along with that either.

And I like a crispy, boiled then grilled wing as much as a fried wing, if not more. It's covered in sauce and slathered in dip anyway. The texture is definitely there.

That whole process is a mess. It's easier, and tastes better, to fry. Buffalo wings aren't boiled. They never have been.

I fry them in an electric fryer. I don't find it to be so messy. I fry and drain them. If I was to boil them, I'd have to boil and drain.

I like them on the grill as well. For the simple reason that baking or frying them inside stinks up the kitchen. I smoke them around 225-250, and then take them off and sauce them while I get the grill up to around 375-400. Put them back on for a little bit to crisp them up.

This always makes me laugh because I grew up in kitchen that was used for all kinds of cooking. We never thought of food as "stinking up the kitchen". It's a kitchen. The intent is to cook in the kitchen. We fried, baked, broiled, boiled, simmered, sauteed etc... in the kitchen. I do the same thing in my own kitchen. I have a gas grill in my stovetop, so I also grill in the kitchen.

We also use the inside bathrooms. They get a little stinky, but they're bathrooms and it's all good. We weren't raised to go outside. Well, except the boys. They wee weed outside sometimes because that's what boys do.

Well heck, that does it then.. I've wasted 50 years of my life frying those sob's. All that extra time and mess... Dammit!

Well I can eat wings and smell them for the next 4 hours or I can grab some beer and go outside to the grill and not smell them. I just prefer the latter. Similar to eating at a nice restaurant and bringing home leftovers. You get in your car the next morning and it still smells like last nights dinner. Except not nearly as appealing as it was when fresh.

Get a better stove vent hood. Not the toy kind with a microwave built into it.
