Crawfish from Arabi...whats the details on this? how long do you smoke (temp) then when do you wrap. Everything online is all over the place.

I did some tonight after I pulled my butt and they were good, but yours looks amazing!

When I was still working, pre-pandemic, I’d go with co-workers to get plate lunches at a particular place that did excellent BBQ’d or smothered pork steaks. Today I went to that same place and stood in line for thirty minutes, anxious to have some delicious pork steak again. I was getting it to go for a Sunday dinner at home, so I also got brisket, ribs, sausage and chicken. The brisket was a grey and stringy travesty, the pork steak was only okay, and the rest was meh. What a waste of time and money.

My son was still happy with Mom’s baked mac and cheese, though, and left with the whole pan for meals during the week. And rice dressing, too.

I saw that the new Kartchner’s in Lafayette is doing bbq pork steak plates. Pics looked good.
