Pork Sausage and Cabbage Stir Fry - Keto Friendly (photos)

We are doing Keto at our house and eating dishes we have not cooked in a while. Here is an old favorite we cooked the other night. This is a keeper, even if you are not trying to eat high protein, low carbs.

The quantities I show here are suggestions. Use the amount you like, for more or less sausage and cabbage.

Pork sausage and cabbage stir fry

Need:

1/2 to 1 pound of country sausage
2 - 4 cups cabbage slaw. I used pre cut from a bag, with a little carrot. I used 1/2 of the bag to feed 2
2-3 teaspoons minced fresh ginger
2 teaspoons minced garlic
2-4 green onions, sliced, with some of the green tops saved for serving
2 eggs
3 Tablespoons Soy Sauce - this is the source of salt for the dish, so use it to taste
2-3 tablespoons water





I did not use the white onion shown in the top photo.

Brown off the sausage, making sure to break it up as it cooks.



Drain off and discard as much of the fat as possible.



Mince the ginger. I like using a micro-plane for this.



Slice the green onions. Save some of the tops for plating.



Add the garlic, minced ginger and onions to the pork.



Add the cabbage. Use the amount you like. I used half of my bag of pre-shredded slaw mix.



Add a splash of water to make a little steam and cook until the cabbage is tender.





Add the eggs and then scramble them, until they are cooked. I like eggs in my fried rice, so I also use them here.





Add soy sauce to taste. This is the source of salt in the dish, so be careful to not use too much.



Add the remaining green onion tops when plating.

Not a bad keto friendly dish.

You could include cauliflower, zucchini, celery, broccoli, water chestnuts, etc., if desired.

Not bad

I expected this to be smothered cabbage. I was ready to be completely turned off by even the thought of the smell.

In case anyone is interested, my list of Keto Friendly vegetables includes (in no particular order):

Asparagus
Broccoli
Brussels sprouts
Cabbage
Cauliflower
Celery
Cucumber
Green Beans
Kale
Peppers (red and green)
Spinach
Olives
Zucchini
Lettuce
Kale
Swiss chard
Water chestnuts
Avocado (technically a fruit)
Okra
Yellow Squash
Tomatoes - in moderation due to high sugar content
Onion - in moderation due to high sugar content
Carrots - In careful moderation - High sugar content

Hopefully, you won't see me using potatoes, peas, beans, corn, or stuff like that for a while. No sugar, rice, or bread either

I’ve made this before but never considered putting eggs in it. We call it ‘Egg roll bowl’

I bet it would be.

An added note:

If I were going to do that, I think I would lower the percentage of sausage some and raise the percentage of cabbage some. Maybe drop the sausage by 50% and add another 1/2 to 1 cup of cabbage, and maybe another green onion it two.

That’s pretty much what it is.

OP, I’ve made a dish like this before too. You can use this to make cabbage rolls. It’s really great, and breaks up the keto monotony. Great post, great pics!!

Make mine identical, but I add a couple teaspoons of sesame oil.

Really good however you make it. Wish I had some lo mein crunchy noodles to go with it

Looks great! Very similar to the Egg Roll in a Bowl recipe we make. Mixing a little mayo and sriracha to put on top isn't bad either. Also might recommend Liquid Aminos vs. the soy sauce.
