Pork chops and gravy

Decided to smother pork chops since it started raining too much to grill. I seared on both sides, removed the chops, browned onions, added the chops back with water to cover, and then simmered on low covered for 30 minutes.

How long should they simmer before they’re falling apart fork tender? Should I turn up the temp?

Shouldn't be much longer. Whenever I smother I usually put them on low to simmer and check back in 30 and 45 mins. Depends on size of pork chop cut too. Thin chops would be done closer to 30 in my experience. Regular cut would be closer to 45/50.

I simmer my chops for a couple of hours. By that time, you usually have to pick them up in pieces.

I do exactly what you did, but I use 50/50 chicken stock/water. I usually simmer low and slow for about 1.5-2 hrs. I like them tender but not shredded.
