am willing to go through learning curve of stones if it provides a noticable difference over work sharp
Yes. Whetstones will put an edge on your blades that is unrivaled. The worksharp will put a very sharp edge (not as sharp as whetstones) for quite a bit less work and far less training or practice. It is just a matter of how important that last 10% of sharpness means to you compared to how much time you want to put in to gain it.
The knifeaid service is nice because I have about 10 blades that I keep up at home. I sent them off and had them back in a week. I spent a total of $80 (if I remember correctly) and spent a total of 5 minutes prepping for delivery. 10 blades would have been a couple of hours of work for me. I’m not rich, but it is a luxury that I can afford so I use it. It is kind of like lawn care. Sure, I can do a fine job, but I would rather pay someone else to deal with it so I can do other things with my time.

when ordering the kiwi knives online @ Amazon will I get on a attack watch list?
just in case I do I can show this message here that I will be using them to cook for the love of God... and I don't live in the UK where knives are banned.

as someone said on page 2 - worksharp belt knife sharpener - best $100 I have ever spent (well other than that night w/ a ...). Lots of youtube videos on how to do it. You can easily get any knife razor sharp especially of you use an old 5000 grit belt w/ metal/bore polish.
Also recommended was a steel to keep an edge they are a must have. I have every whetsone/diamond grit combo known to man - worksharp is all I use.

I purchased one a couple days ago through amazon and set to arrive on Thursday. I noticed a couple of my fixed bladed fillet knives were dulling and my wife loves to get under my skin by throwing the good kitchen knives in the dishwasher instead of hand washing. Have a lot of dull blades in the house that could use some attention. The work sharp seemed like the best pick for a novice trying to get everything back in shape. Bought the new "mk2" which has 20 and 25 degree sharpening guides. Came out to be $80sh.
They had a cheaper $50 unit that I was tempted to buy but figured I might as well shell out a few extra bucks in case I want to sharpen the tools as well.
