Please help me name/properly designate this south Asian dish

2lbs stew meat (pork or beef)
1lb bone in meat (ribs)
1 red onion, sliced
1 bell pepper, sliced
4 jalapeños, sliced
4 stalks celery, sliced
1 bunch green onions, segregated/sliced
1 bunch cilantro, chopped
4 cloves garlic, grated
2 inches ginger(1tblspn), grated
1/2 lb white mushrooms, sliced
Container cherry tomatoes, halved
Sirachi, creole mustard, 5 spice
2 qt broth
2 limes, zested/juiced
1/4 cup rice vinegar
1/4 cup soy sauce
2 tblspn fish sauce
Season meat liberally with mustard/Sirachi/5spice
Brown meat in large Dutch oven and remove
Add aromatics to deglaze pot and cook down
Add mushrooms and tomatoes
Add broth, liquid seasonings
Add back meat
Reseason with more mustard/Sirachi
Simmer on low heat (2 hrs)
Top with green onion tops/cilantro
Serve over rice or rice noodles
I know I’m crossing many cultural/flavor lines…Chinese(five spice), Vietnamese, Thai.
It’s not Pho. Is it Ramen? Is it just some bastard Asian stew/ragout?
It is delicious. Had it tonight (used chuck stew meat, 1 short rib and beef/mushroom broth) over ramen with green papaya salad.
Everyone cleaned their bowls/plates.

It sounds somewhat like Bò Kho, a Vietnamese beef stew, but it usually has star anise and lemongrass to go along with the ginger, fish sauce, etc. in your recipe.
I lean to this.
