I brined mine for a couple of days for thanksgiving. Used OJ, rosemary, garlic, etc.

lay it on a folding table. Season with salt, pepper, cayenne, garlic, paprika, onion powder.
Inject with some cajun injector seasonings
put in in cajun micro or over the fire.

The best whole pigs I have eaten were thoroughly injected with seasoning. I didn’t do the injecting myself. Just going off what the cooks told me. They injected and marinated over night before cooking. Don’t over cook.
