Pepper Jelly

Made last night for the first time and it went alot easier than I expected. I was pretty intimidated by all the strict guidelines on home canning so as not to "kill sumbuddy". I sterilized the jars and a couple hours after we put the lids on I could hear the lids start to pop down 1 by 1. Thinking I'll be a cheap arse and give everyone in the extended family a jar for Christmas. Canned pepper jelly for the women and canned salsa for the men...

Never done anything like that before but I love some pepper jelly.

How's it done exactly?

Its as simple as following a recipe. Just cook the jelly and boil the jars at the same time then pour the jelly in the jars, put a lid on and let them cool.

That's a great gift idea. The best pepper jelly that I have ever had was Tabasco, I believe.

It tastes very similar to that for probably 1/4 the cost. Plus its a gift from the heart

cant argue that but i still love some pineapple habenero pepper jelly from texas pepper jelly.

i order it *literally* by the case about once a year.

Hmm sounds awesome. Got the gears turning for an experiment. For sure habeneros would be too hot on their own to flavor jelly but now I want to make something like that.
