Pastalaya help!

Howdy all,
I consider myself a decent cook and I have my stable of 12-15 recipes that I rotate through. I make a mean gumbo (who doesn't), but I have never gotten the hang of jambalaya/pastalaya. I want to figure out how to make a good pastalaya (I prefer it over jambalaya).
I am hoping yall can give me some pointers and started in the right direction. I am not using Google because I dont want a Disney pastalaya.

The jambalaya calculator has a pastalaya tab. I follow it, and it’s always good.
