Paprika is used primarily to add color to things. Smoked paprika used for the flavor. Won’t do much for your gumbo imo.
If you do use it, add it when you sweat/season veg.

I'm a bit scarred from file as one of the first times making gumbo I added too much, and well I'm sure you all can guess how that ended. Only add to individual bowls since...

Prudhomme's recipe relies on the seasoning in the flour fried on the chicken and seasoning from the andouille to flavor the gumbo. I use some of the seasoning mix he includes for the guinea hen gumbo on the next page of that book as an addition to the recipe posted above.
