P Terry's Fries - Recipe (sort of) inside

This was posted today in the Austin American Statesman. P Terry's fries are very good. They are not very crispy, which you think would be a bad thing, but the flavor is always spot on. They are some of the best fast food fries you can get.
Anyway, here is what they are sharing on how they make them:

He starts by slicing potatoes from two boxes, each around 35 pounds, into thin slices. With a metal tool, he can slice one potato in seconds. He pours hot water and vinegar onto the potato slices and lets that sit for exactly 20 minutes. He dumps the water and repeats that process one more time.
After the second set of water and vinegar, he runs the slices through ice-cold water, and then dries them in a spin dryer.
Once the slices are dry, they are ready to be fried. With a bowl, he scoops the slices and throws them in the frying bin for 3 minutes. After frying, Davila drains the oil from the bin and tosses the fries on a metal platter and sprinkles salt.
Lastly, with metal claws, Davila puts a bundle of fries into a white paper bag and twists the ends to secure the fries.

They won the statesman's poll for best fries in Austin. They're good, no doubt. But seemed like an odd winner to me. Kinda greasy the last time I had them. Another run through the fryer might crisp them better.

Big fan of p terry in general, including their fries. Grabbed a double cheese burger meal for $10.04 a few weeks ago. Hard to find that these days.
I remember it was $10.04 because I was surprised I was able to have lunch, any lunch, for $10.

Hat Creek and P Terry's are not at all the same type of restaurant. Hat Creek is more of a sit down joint, their burgers are more specialized (kind of like Torchy's does for tacos), and their burgers start at around $8. P Terry's is basically old fashioned style burgers, and only have a couple options. And you can still get a burger for less than $4, or a combo for $8.

I eat at P Terry's way to much and their fries are awesome. Also, you can substitute one of their unreal milkshakes for no extra price instead of a coke when you a meal combo.
Caramel milkshakes their are so freaking good.
