Supposedly An Authentic Representation

I made this a few days ago. It’s excellent. I adjusted the seasoning to taste...doubled the red pepper and increased the garlic. Best version I’ve had.

I’ve always heard there was watercress in the original. Not the easiest thing to find.

Could be. I hate Pernod. The tarragon was an excellent replacement. I can see watercress being a component.

I love Pernod. An off menu item at Pascal’s Manele was crabmeat Rockefeller. Outstanding.
