Oxtail Stew and Braised Mustard Greens

Cooking a whole lot of deliciousnous.
Oxtail stew (oxtail, beef ribs, and soup shank stew because oxtail is priced stupidly). Will be served over egg noodles. Used a crockpot because I left my cast iron pot at my parents house for thanksgiving.
With a side of Beer Braised Mustard Greens with bacon
And will be drinking a homebrewed coffee oatmeal stout.
I'll take another pic when it's on the plate/bowl. Smells incredible in here. Will post the recipes tomorrow.

Love me some oxtail. The cheapest place I found it us the Asian Market in Houma.

Found some at Alexander's. Last time I use oxtail. Just going to start using beef short ribs and a soup shank for the marrow. Oxtail is too expensive and tough. The short ribs are melting off the bone.

Here's the recipes.
Oxtail Stew - Didn't have my cast iron pot to cook with, so i did it in a slow cooker. And i skimmed out a bowl full of grease/oil/fat before eating. With all that fatty meat it's needed. Some proposed edits: Next time, don't bother with oxtail, just use beef short ribs. Meat is more tender and less fatty. I'll also throw in another soup shank for the marrow. Oxtail is too pricey and is a pain in the arse to debone.

This was fantastic. Normally i make very simple mustard greens. Just salt pork and greens. This, however, takes it to a whole new level. Proposed edits: Next time i make this, i'll probably reduce the salt from 3 tspns to 2/2.5. Also maybe slightly reduce the amount of vinegar and molasses, if at all. It is fantastic as is, i just prefer to taste more of the greens. You can definitely taste greens as is, i'm just use to plain old, salt pork and greens recipe. Overall, this was fantastic.
