Over Easy Egg or Omelette? How about an Over Easy Egg Omelette.

I had a little bit of beaten egg left over from making the family omelettes. I kind of wanted over easy eggs but I didn't want the beaten egg to go to waste. So in a moment of pure insane brilliance I decided to omelette my over easy egg.
Start with the over easy egg cooking in the pan. As you flip the egg pour the beaten egg to the side of the over easy egg. Flip the over easy egg into the beaten egg. Fold beaten egg around over easy egg. Flip the omelette to seal the fold. Serve.
Results? Fantastic. A nicely beaten fluffy fried egg shell with a perfect runny yolk in the center. Next time I will need to try to add additional omelette type ingredients into the over easy egg omelette and see if I can keep the yolk intact. More testing to follow.

Am partial to this Indian omlette method which involves 2 eggs and 2 slices of bread with your choice of toppings. Gives a little over easy omlette and ready in less than a min.

I want to try that so bad but know I would 100% break the yolk attempting to fold it together

I like a puffy French omelet that is “molleux”, or still runny in the middle. So I’d like your over easy egg masquerading as an omelet. I think a runny egg improves many savory dishes.

Granny's 60 year old cast iron pan, plenty of butter, and a thin flexible metal spatula helps out a ton.
