I do wings at home 95% of the time unless I'm going see jmarto @ Hooters. I haven't noticed a size difference in the stores.
Favorite way is deep fried in a traditional style. Two things I do that really make the difference...I use celery salt and I fry at 325*.
I also like to smoke them then flash fry them and finish with whatever sauce I'm feeling that day. This is a honey/Sriracha sauce

Try the buffalo wings from Walmart. 5.99/lb and is legit.

I do pretty much this same method in my Instant Pot. Takes 15-20 minutes, total. I can never get the skin as crispy as frying them though, but they are good.

Boil, dry, fry, and sauce. Perfect every time.
