not meant to hijack...but...this thread reminded me of "okra and tomatoes" side dish that I haven't had in probably 20 years .Used to be staple in plate lunches in S Louisiana and Mom made it great.

Cook it about 3 hours before you add it tonyour gumbo. You can use frozen.

I put frozen okra in a baking sheet with Pam and bake it for about 20-30 minutes. The add it to my gumbo at the end. No slime.

everyone saying okra dont belong in gumbo dont know what word gumbo comes from......

that being said i dont use gumbo in a chicken sausage gumbo
