If I want to grill something there are several quality cuts from the hams that will work equally well. Straps and tenderloin get fried. Although I usually prefer homemade biscuits and fried eggs rather than mashed potatoes.

marinate in Italian dressing for 24 hours, wrap in hickory smoked bacon, let it come to room temp then grill on hot fire and/or reverse sear to your degree of done, let it set up, slice to your preferred thickness, enjoy...

OP, as others have said, cut into mini steaks and chicken fry it. Buttefly into about a 1/2" steak and then pound flat with a skillet to about 1/4" thick. Egg wash then flour then fry in a cast iron skillet with butter. Do NOT overcook it. I promise you this will be one of the best things you've ever eaten. I would reserve the other half of the backstrap and sear on a very hot charcoal grill or in an iron skillet to whatever temp you like your steak cooked at.
