OP im with you. I was in Sweden for a week. While the food wasnt gross, it wasnt good either. Very bland and "grey" is how I would describe it.

I think the whole point of NOMA and why it's so badass is that most people acknowledge that traditional Scandinavian food kind of sucks. Then NOMA came along and elevated the shite out of it while remaining hyper local in ingredient sourcing. Suddenly you have this region which has never been known for interesting or palatable food producing some of the most innovative and delicious food in the world.
So yes, it doesn't surprise me that you were underwhelmed by their food. In one of the Rene Rezepi interviews, he takes someone (Bourdain maybe?) to eat some traditional Scandinavian comfort food, and it looked like complete crap.

I was on a business trip (estradiol delivery system) working with Novo Nordisk.
Oysters, salmon, crepes, beer, cold water white fish with sauces, goose, Rye bread, potatoes, root vegetables, mushrooms did I mention beer?
Stayed here just across Tivoli from the Rodan Museum
Have no idea of the names of any of the restaurants where we dined. I never purchased a meal. They were all within walking distance of the hotel and our Nova Nordisk guy was always our host.
I bet we walked by 50 restaurants in that area. All looked good to me.
I'm sorry your dining was not up to expectations. I would go back tomorrow. Beautiful old old city.
