There are a ton of crock pot cookbooks, I own about 5, lots of good stuff in them. If you are going next year save your pennies and buy a couple, you have more than enough time.

Chicken & Stuffing Crockpot

1 pkg Stove Top Stuffing (dry)
1 little package of spices/herbs that may still come with your stuffing mix
1 can cream of mushroom
1/4 cup water
4 boneless skinless chicken breasts

Mix first four ingredients together (I just did it in the crock pot) place defrosted chicken on top and cook on low for 7 hours.

Beef & macaroni Crock-pot
2 cans mushroom soup
2 c. shredded cheese
1 lb. cooked and drained ground beef
2 c. milk
2 c. uncooked macaroni
2 T. minced onions
salt and pepper to taste

Mix all & place in greased Crock Pot. Cook on low for 6 hours until pasta is done.

Beef & Potatoes
Ingredients
• 2-4 lbs roast beef
• 4 medium onions, cut up
• 6 potatoes (red or new)
• 2 (82 g) envelopes onion soup mix (or standard U.S.)
• 6 tablespoons cornstarch
• salt & pepper (sea salt & freshly cracked black pepper recommended)
• 3 cups dry red wine (Merlot or Beaujolais recommended)
Directions

Place the beef, potatoes and onions in a crockpot. Add the dry soup mix over top. Sprinkle with cornstarch, salt and pepper. Pour red wine over all. Cover and cook on LOW heat setting for 10 to 12 hours (or 5-6 hours on HIGH).
