I mean, you can drink a glass of chocolate milk with a steak and it will go down too. Doesn't mean it's ideal.
Heavier wines will overpower a lighter dish the same way a heavy dish can overpower a lighter wine. Of course there are exceptions with contrasting flavors, but contrasting the body of the wine and food is kind of a waste of which ever one is lighter.
You may like whatever you want to pair, and that's fine, but person with a discerning palate will prefer a correctly paired wine and dish. Wine tasting and pairing is like the first thing any wine enthusiast will learn, even when doing sommelier training.

Maybe this isn't the thread for you. You seem highly agitated that people on a food board are talking about wine in a somewhat serious manner.

Some good advice here re: different varietals and vineyards. I will pass along what a winery owner told me. Wine is supposed to be fun. Don't take it too seriously. Find what you like and drink it. Even if you like it with food that doesn't "go" with it. Drink it with friends and share the experience. Wine is a social drink. Welcome to the party!

Pinot Noir is my go-to. It is our nightly wine. We like Bogle, about $9 a bottle. Box wine is actually OK. It saves you a little money and it isn't bad.
My favorites for when I want something else are Malbec's (the spicier the better) and Temperanillos.

I find I'm enjoying blends/meritage a lot more lately. A good blender can accent what's good about a particular vintage varietal and balance out what's less than ideal with something from another. You end up with a balanced, immeninetly drinkable wine.
I had bought an $8 red blend from Rouse the other day planning to cook with it, and I poured myself a glass and it ended up being so good, I didn't use it in the dish.
