New Orleans to his core, chef Frank Brigtsen preserves the old ways of cooking by teaching

“Whenever he talks, it’s like you hear a tap-tap on the mic,” said Nick Cook, chef de cuisine at Brigtsen’s. “He’s going to say something you’ll want to remember.”
The rest of the kitchen crew was watching too, nodding as the maxims kept coming.
“Fire creates flavor,” Brigtsen said as flames raced in circles around the edge of a pan of barbecue shrimp.
“We’re chasing flavor, that’s what this is about,” the chef said.

I like the food there, although the bar service and wine list aren’t so great. Sounds like they don’t have much of a succession plan. Is this going to be another Upperline situation?

I know I’m in the minority but I never have cared for his restaurant.

I never ate at Brigtsen's, but he personally cooked my fried seafood platter in the last days he was at Charlie's Seafood.
Best fried seafood i ever had.
And he was a pretty nice guy that day.

Charles Seafood was so damn good when he owned it. Problem was, it wasn't as profitable as his uptown place, and the jackass landlord doubled his rent so he shut it down. The latest incarnation of Charles Seafood is ok, but not like it was when Frank owned it.
