It’s in an insulated ice chest. Yes, I’m asking for a towel explanation because I cannot see the science or reasoning behind it.

The idea is to use enough towels that it eliminates all the extra space in the cooler, thus providing more insulation and keeping the meat at temp for a longer period of time. It's not absolutely necessary unless you're resting the meat for several hours before eating.

When it is 20 degrees outside do you wear one windbreaker, because it is insulated, or do you put on more layers for added insulation.

But it’s not 20 degrees in the ice chest. You put hot food in it, it gets hot, and it stays hot since it’s insulated.

It isn't a perfect insulator. Towels just take up the space the air would. They are better insulators than air, that's it. I use a small Coleman "party tray" cooler myself, it limits the extra space so I don't worry about towels, etc. Wrap in foil, place in ice chest and call it a day. I had a bigger ice chest I used to use but was tired of my towels getting brisket juice on them. You can also warm up the towels in the dryer then throw them in the ice chest beforehand to preheat it and keep it warmer longer.
