What about some place I could get him some good etouffe or good crawfish bisque or a good muffaletta?

Serio's is nearby and makes a credible muffuletta.

For etouffee and bisque I'm back to recommending BonTon. My Thibodaux born father-in-law orders the etouffee there every time he goes, for what it is worth.

Too many people said Bon Ton. So that's the winner. Thanks food board!

you're doing it wrong by not going to Cochon.

hit Cochon butcher up after and get a Muff to go.
