I’m making Ramen with shrimp and stir fry style vegetables. Should I sauté the shrimp in some seasoning them top my ramen with it or should I cook the shrimp in the ramen liquid and let it absorb flavor that way?

What texture are you looking for from the shrimp, boiled and softer or grill marks and a bit more firm?

I would de-vein and butterfly. Season, cook in skillet with butter & lemon sauce. Set shrimp aside, stir fry your vegetables in same skillet. Shrimp will look like this when done , perfect bite size

It really depends on what you want in the final result.

The shrimp will have the flavor of shrimp and the cooking liquid.

You can adjust the seasoning for the shrimp if you want to create another layer of flavor for the ramen (spicy, citrus, garlic, etc...)
