That doesn't even make sense from a mere thermodynamic point. You are going to tell me meat at 35-40 degrees cooks the same as that of 60 degrees? It takes the same amount of time to come up to 130 degrees??

a cooled steak allows the outside to sear without cooking the interior too quickly. room temp steak has less wiggle room and can result in a tough cut.

Yeah, I saw that. Just want to see what other suggestions I get from this forum. I've been asking coworkers and friends as well.

I've been stressing myself out over these damn steaks because they are so friggin expensive. I decided to go with the suggestion to let him cook it.
