Crawfish Zeppole to keep with the Italian theme. Search for Calabrese zeppole recipe and sub Crawfish for the anchovies.

Bon Temps Grill in Laffy does a beautifully presented crawfish pie, a HUGE serving for any diner. While I haven't tasted it, I was turned off when I found out there was rice in it.

(I still enjoy the restuarant, though.)

thanks for all the suggestions. I think I'm going to make filo shells filled with etouffee and topped with cheese-- bake and brown. I may stick a little bacon under the etouffee for a surprise.

Made the etouffee today and had some on top of thin sliced pork tenderloin on top of a crostini with meted Italian 5 cheese. It was real good.

I'm a rice lover, but I just don't care for it in certain things. It doesn't go in everything for my taste.

Lasyone's has a pretty good crawfish pie like their meat pies. No rice in those. I like the meat pies better, but the crawfish pie is much better than the ones with rice in them, to me.

Crawfish Dip

1 stick of butter
2 bunches green onions (chopped)
½ cup of flour
2 lbs of crawfish
8 oz sour cream
1 can cream of mushroom soup
8 oz cans of mushroom slices (drained)
2 tsp Worcestershire Sauce (I like a little more)
1 tsp salt
¼ tsp black pepper
¼ tsp cayenne pepper
minced garlic (optional)
Tabasco to taste

Sauté green onions and garlic in butter.
Stir in flour gradually
Add crawfish, continue to sauté.
Add mushrooms and seasonings
Stir in sour cream and cream of mushroom soup

Serve as a dip with crackers, in patty shells, or over fish
Recipe may be halved, but then you are left with ½ can cream of mushroom soup
