They make devices now for these hat can basically get your temp where you want it and hold it. Basically what pellet smokers do.
I believe DigiQ is one of them, but you’ll pay a couple hundred bucks for it.

This. I'd use the 18 for grilling and get a cheap 22 for smoking.
This x 1000.
I ha e a 22", and it's perfect for doing a large butt or 2 smaller ones. The 18.5 is going to be a tight fit.
Practice with it and if you like it, try the 22".

Loving it. I was looking for 250° which I'm fine running in a 250-275 range. I've really held steady between 255 and 260 with a few spikes and drops

Been rocking my Weber Performer this grilling season while I wait for a back ordered part for my daily use cooker.
I'm enjoying getting reacquainted with it. As mentioned, bottom vents wide open, top vent for temp control.
You might want to retrofit one or two thermometers (temp gauge) on the lid. One opposite the vent for direct cooking and another in the sidewall below the vent for indirect cooking (this is my next mod).
Imagine for posterity.

Weber Kettles are awesome. Get you a slow n sear and never look back

The Slow n Sear is great. Very well made, fits my 22" Weber perfectly. I like to use clamps on the lid to really make it fit tight, and that helps keep the temp consistent. Make sure to put water in there, that helps regulate temp as wel
