Make an Oyster benedict. Deep fry the oysters and top with a poached egg with hollandaise or maybe a etouffee sauce. I been wanting to do that with some fish just never got around to it yet.

Sounds great, my fiancé isn’t a fried oyster fan though, and honestly I feel like frying an oyster of this quality does them an injustice. I love a fried oyster, but prefer the big falling off the cracker wild ones for frying. I’m thinking less of a recipe and more of a take on “breakfast” oysters. My sister is coming into town tonight, so it’ll be breakfast for 3 in the morning. My idea:
Half dozen each baked with a dollop of compound butter, top each with crumbled bacon and an over easy quail egg, garnish heavily with chives. Serve with a spoonful of cheese grits and a slice of French bread.
Since I’ll be cooking pancakes at the same time for my nephew too I don’t want to go too crazy

Oysters and scrambled eggs is excellent! Use the liquor from the oysters and toss oysters in just long enough for the gills to start to curl. Hopefully you try Navy Coves soon. All 3 partners are LSU alumni!

Oh hell yea that sounds good to! I eat 2 eggs every morning so I get bored and rummage through the fridge looking for things to mix in

Had them last night. Was definitely smooth and clean with buttery finish.
Had them with these flavors:
Straight raw - great flavor and briny
Champagne vinegar mignonette
Red wine vinegar mignonette
Jalapeño cranberry mignonette
Old fashioned cocktail sauce
My favorite was the cocktail sauce because of the amazing finish at the end. You got the sweet, salty and acid all balanced together
Was very clean! Win!

If these were just a “half sized” larger, they would absolutely be the best oysters around.

Prep. Had to eat a few raw as I shucked. As good as last time. Each one has a consistent everything. Size, taste, texture, brininess.

Good observation, they have always sold a smaller oyster and good for them being able to do that. We tried but got too much negative feedback from our clientele. Our oysters we are selling now are 3 inches. We do have a few smaller ones mixed in for the ladies!
