I made one last summer with leftover boiled shrimp and spec fillets, used the larger ones worked well. Also added some watermelon to give it a little sweetness.

No it's not bad, it's just the extreme. I've never had ceviche. I've certainly never made it. I need a lot more to go by than "wing it"!

Whenever I make anything I write it down. That way if I like it, I can keep it or if I missed, I can make changes.

You don't need exact measurement unless you are baking. Just eyeball it. 2/3 c onion vs 1/2 c is not going to make a difference.

Agreed. However, this recipe had two measurements posted outa all the ingredients.

As a first timer, it makes it difficult as I've never had any before.

sweet. I have some specs in the freezer from a couple weekends ago and was just wondering last night how good it would be in a ceviche. I like that you don't use any tomato sauce in your recipe. I don't either.
