Don't use it enough how? What would you say it adds to a particular dish? Crawfish flavor? Can you really taste crawfish in any of the preparations people typically use? I think whatever flavor it has is absolutely obliterated by boiling with copious seasonings, or cooked to mush in etouffee, etc.
