Min internal temp for smoking salmon?
Just smoked a slab of salmon. Internet says 145 for internal temp. My thickest piece reached about 135, but I was afraid to over cook it.

Should be good, huh?

Yes, and you can probably go lower. 125 is pretty close to a sweet spot for texture.

What kind of salmon? How was it kept?

People eat it raw, so there's that.

I never check temp on salmon, I usually smoke it for about 25-30 min and its done. It doesnt take very long.
