This is going to be an outstanding addition to the neighborhood. With Government St revamp, and this Downtown/Old South BR/Midcity renaissance taking place, the future is looking bright for the Capital City. These sorts of locally owned places are exactly whats needed.

You know there is only one 2-1/2 to 3 pound tri-tip in an entire side of beef. It makes me wonder where they're all coming from.

Actually there are two. One on each side. I've seen them here as sirloin tip and people don't know what the hell they are.

I always see people from Cali say tri-tips are everywhere. Even have a tailgate member who lived in North Carolina for a few years and said they were in all of the stores there. The ones i have seen in vacuum packs likes at Costco look nothing like what I get from Maxwell's on highland.

Which is fine by me. They are priced the same as sirloin where I buy my meat and I snatch it up every time I see one. From what I understand they are priced a good bit higher at most places.

I'm pretty excited about a dedicated butcher shop.

I guess I'm not cool. We live in Ascension. I like tri-tip and butcher shops though. 2 out of 3 isn't bad.

Are their good specialty butchers in Ascension or is Ralph's the best we have?

Also, are you P-ville, Gonzales, St. Amant, Sorrento, or a Wanker?
