Thank You to all our fallen heroes who have given the ultimate sacrifice for our freedoms.

As many of you will also be, I’m enjoying the unofficial first day of summer by smoking some meat.

Started a few hours ago by giving a pork shoulder a nice slathering with mustard and dry rub while enjoying a rum and coke.

Started smoking it at about 11:00 last night on my electric Masterbuilt at 225.

Joining it on the smoker at about 4:00 was a nice 8 lb brisket.

Now we wait and drink some Trader Joe’s coffee.

I've got some nice redfish filets still on the half-shell and will grill some home grown Yard Long Beans and fresh corn with them later today.

Wrapped the shoulder in foil at 165. Put on some leg quarters.

It should all be done by 11. Fingers crossed.

The store has chicken breasts on sale for .99 cents a LB. The pack was 5.50 for 4 breasts..so that gives you an idea how big these tits are.. On the grill to smoke in a few hours. Add in some fresh corn, baked beans and loaded baked potatoes..

That's what I pay for them at Rouses when they go on sale several times a year. I'll buy a few packs of the split breasts with skin and bones attached, discard the skin and cut the meat off the bones and then use the bones to make a good chicken stock. Win/Win, and at a great price.

And you're right, those breasts are HUGE.

I did some smoked beans last night. Just got my ribs trimmed and ready to go on the smoker shortly.

Newb question I guess. I usually buy the store bought ribs, got a little better quality this time. These still have what I guess I'd call the skirt meat attached to the bone side. I trimmed that off but that seems like a nice piece of meat to waste. Suggestions on how to cook it?

I’m gonna go with a grilled butterflied leg of lamb, roasted vegetables, couscous, hummus and pita bread. Lots of garlic, lemon and thyme/rosemary

quick on the grill and should be tasty

Brookeshire's in Shreveport running a deal. Buy a 30 oz pack of all beef hotdogs and get the buns, bag of chips, mustard, and relish for free. So we gonna have some dogs and sit by the pool.

Well, the brisket isn’t my best. It’s not dry, but it’s not juicy

The chicken, beans and pork are heavenly.
