Maque Choux recipes?

I start by melting a stick off butter in the pot. Melt down a small yellow onion till clear, add 1 can of regular rotel, smother that down for about 20 minutes adding water as needed to keep it from sticking. Then I add a 32 oz bag of frozen corn.

I like a lot of Emeril's recipe's. I've used this recipe before.

I add about 1/4 - 1/2 tsp of crab boil to that recipe.

Just cooked it last night:

Melt butter and chopped onions with a good amount of Tony's for about 10 minutes

Add corn and sautée for another 10 minutes

Add diced tomatoes and some whole cream and cook for about 30 minutes or until the cream cooks down ..

Serve and enjoy ..
