The easiest thing to customize is salsa. Fresh salsa is easy, fast and does a lot.

I'm not a ground beef fan. Have a meat that matches what you're trying to do. Red or green chili pork or red chili beef are easy options.

I like adding green chili, some fresh onions, maybe black beans. Fresh cheese over queso all the way. Pickled jalapenos are always good. I'm not a sour cream fan, but a good guacamole is a nice finisher.

Thanks for the rec’s.

We really went all out.

-Leftover Fliet sliced and cut into bite sizes.
-smoked Costco brisket
-mixed Mexican cheeses
-Jalapeños
-black beans
-cilantro
-sliced avocado
-sour cream

The filet & brisket put them over the top.

When it comes to nachos I like mine simple or plain. Tortilla chips, queso/nacho cheese, jalapeños.

Carne asada fries is where I pile stuff on.
Steak
Shredded cheese
Sour cream
Guacamole
Pico de gallo
Salsa verde
