This isn't a nuance. This is Giants/Dodgers level of bitterness. Not to mention the general food world bastardizes jambalaya more than any other LA dish.

Thanks. The recipe from the FDB cookbook turned out really well but always willing to try something different, especially if it involves more pig.

pochejp is a legend and his Jambalaya recipe is a nearly perfect Gonzales Brown Traditional jamby as you will ever get.
If you learn to make this well, you will never be without friends asking for help "cooking"
