Made "Texas Twinkies" Yesterday for Super Bowl

Had some leftover brisket in the freezer so I chopped it up to go inside of some Texas Twinkies. Very simple but so delicious.
Chopped up the brisket and removed the core and seeds from jalapenos.
Not pictured but I blanched the jalapenos in boiling water for about 3 minutes then put in an ice bath.
Sliced one side to open them up. Spread cream cheese, top with brisket, and close the jalapenos back up.
Wrap with bacon and secure with toothpicks
I smoked with hickory for about an hour at 250 degrees. Mixed a Texas Style bbq sauce I had with some brown sugar to make more of a sweet sauce that I brushed on. Back in the smoker for another 15 minutes.
Finished product along with some Opa jalapeno and cheddar sausage that I tossed in the smoker as well.

Same concept but these are a little different since they include brisket in the center.

Man that’s a great idea. I have tons of left over pork shoulder and may make some using that.

Next time I might stuff with some smoked sausage.
