Made some bacon

I posted a couple of weeks ago looking for a cure recipe.
Everyone said follow Glock17’s advice, so that’s what I did. Used the measurements as instructed in the calculator and brown sugar instead of white sugar. Cured approximately 11 days in gallon bags, flipped once a day.
Smoked on my WSM using the snake method (2 briquettes wide) and apple wood chunks all along the ring. No water in pan. 8 hours smoke time running between 150-170 until internal temp was 145-150.
Delicious and super easy. This is 1 of 3 pieces from 9 lb. pork belly.

You cut those slices by hand? That's top notch width control.

Hand cut the first few to try it out. Then broke out the slicer.
I’ll add that I also used black pepper in my cure as I like peppered bacon.

Nice work!! I'm curing some right now. Cut a belly in half and I'm doing one half with black pepper and the other with maple sugar. Smoking on Saturday. I'll post some pics when I slice them on Sunday.
